Stir-Fried Clams with Black Bean Sauce

材料:

• Smart Choice精選花蛤400克
• 蒜茸及乾蔥茸各3茶匙
• 青椒及紅椒各100克切粒
• 豆豉2茶匙
• 蔥1條切段
• 紹興酒2茶匙
• 醬汁:蠔油2茶匙、醬油1茶匙、糖1/2茶匙
• 芡:水4茶匙、粟粉1/2茶匙
• 油2湯匙

Ingredients:

• 400g Smart Choice Cooked Clam
• Minced garlic and minced shallot, 3 teaspoons at each
• Diced green pepper and red pepper, 100g at each
• 2 teaspoons fermented black beans
• 1 green onion, sliced
• 2 teaspoons Shaoxing wine
• Sauce: 2 teaspoons oyster sauce, 1 teaspoon soy sauce, 1/2 teaspoon sugar
• Cornstarch slurry: 4 teaspoons water, 1/2 cornstarch
• 2 tablespoons cooking oil

做法:

1. 將Smart Choice精選花蛤解凍、洗淨及瀝乾水;
2. 分別調勻醬汁料及芡,備用;
3. 鑊中下油,大火燒熱下蒜茸、乾蔥茸、豆豉、蔥段、青椒及紅椒粒兜炒約10秒至釋出香氣;
4. 加入洗淨的花蛤,在鑊邊注入紹興酒,馬上蓋上鑊蓋煮約20秒至所有花蛤開始開口;
5. 倒入醬汁快手兜勻,試味;最後埋芡即可上碟。

Instructions:

1. Defrost the Smart Choice cooked clam, washed and drained.
2. Mix well the sauce and cornstarch slurry separately.
3. Heat the oil in wok over high heat. Add minced garlic, shallot, fermented black beans, green onion, green and red peppers, stir-fry the mixture in quick motion for about 10 seconds until the aroma released.
4. Add the cooked clams, pour in the Shaoxing wine around the perimeter of the wok, and immediately cover it for about 20 seconds, until all the clams begin to open.
5. Stir in the sauce and taste, add cornstarch slurry to thicken the sauce.
