Stir-Fry Razor Clam Meat in Spicy Sauce

材料:

• Smart Choice熟蟶子肉300克
• 蒜頭4瓣,切片
• 薑2片
• 洋蔥1個,切絲
• 青蔥2條,切段
• 乾辣椒10克
• 豆瓣醬1湯匙
• 紹興酒1湯匙
• 油適量
調味:
• 蠔油2茶匙
• 生油2茶匙
• 老抽1/2茶匙
• 糖1茶匙

Ingredients:

• 300g Smart Choice cooked razor clam meat
• 4 cloves of garlic, sliced
• 2 slices of ginger
• 1 medium onion, sliced
• 2 green onions, cut in long pieces
• 10g dried red hot pepper chilli
• 1 tablespoon chilli bean sauce
• 1 tablespoon Shaoxing rice wine
• Cooking oil
Seasoning:
• 2 teaspoons oyster sauce
• 2 teaspoons soy sauce
• 1/2 teaspoon dark soy sauce
• 1 teaspoon sugar

做法:

1. 將Smart Choice熟蟶子肉解凍、洗淨、瀝乾水,沿中間剖開但不要切斷,這樣可以縮短烹調時間;
2. 在鑊內燒熱適量油,加入薑片、蒜片、洋蔥及蔥段,中火爆炒1-2分鐘至香味釋出;
3. 加入豆瓣醬炒出香氣,再贊下紹興酒,隨即加入生抽、蠔油、老炒、糖及乾辣椒炒勻;
4. 最後放入蟶子肉兜炒約10秒至所有蟶子肉沾上醬汁,便可上碟。

小貼士:Smart Choice 熟蟶子肉已經煮熟,只需烹調很短時間已經美味可口;過份烹調會影響口感。

Instructions:

1. Defrost the Smart Choice cooked razor clam meat, washed and drained. Butterfly cut the razor clam meat helps to shorten the cooking time.
2. Heat the oil in a frying pan, add sliced ginger, garlic, onion, and green onion, stir-fry over medium heat for around 1-2 minutes until fragrance is released.
3. Add the chilli bean sauce, stir-fry to release the fragrance, then pour in the Shaoxing wine. Follow by adding in soy sauce, oyster sauce, dark soy sauce, sugar and dried red pepper chilli, stir well.
4. Lastly, add the razor clam meat and quick stir-fry for around 10 seconds until sauce cover all clam. Serve it hot.

Cooking tips: Smart Choice Cooked Razor Clam Meat is a cooked product; it only requires a short cooking time. Over-cooked will affect the quality.
