香蒜粉絲蒸蟶子

Steam Razor Clam Meat with Green Bean Vermicelli and Crispy Garlic Sauce

材料:

• Smart Choice熟蟶子肉300克
• 乾粉絲80克
• 紹興酒1湯匙
• 蒜蓉100克
• 鹽1茶匙
• 蠔油2茶匙
• 生油2茶匙
• 指天椒2隻(切粒)(不吃辣可免)
• 蔥花適量
• 油適量

Ingredients:

• 300g Smart Choice cooked razor clam meat
• 80g dried green bean vermicelli
• 1 tablespoon Shaoxin cooking wine
• 100g garlic, minced
• 1 teaspoon salt
• 2 teaspoons oyster sauce
• 2 teaspoons soy sauce
• 2 hot chile pepper, chopped (can skip)
• 1 green onion, chopped
• Cooking oil

做法:

1. 將Smart Choice熟蟶子肉解凍、洗淨、瀝乾水,加入紹興酒抓勻;
2. 在鑊內燒熱適量油,小火把蒜蓉翻炒至金黃色盛起;在炒好的蒜蓉內加入鹽、蠔油及生抽調勻成蒜蓉醬,備用;
3. 用溫水將粉絲浸軟(約一小時),瀝乾水,剪短約5寸長;
4. 取一大碟,將粉絲段均勻鋪滿碟上,上面放上蟶子肉,用勺子均勻在蟶子肉上放上蒜蓉醬,再灑上指天椒粒;
5. 燒熱一鍋水,整碟蟶子大火隔水蒸5分鐘;
6. 取出灑上蔥花,再用燒熱的油潑在蒸好的蟶子上;趁熱享用。

Instructions:

1. Defrost the Smart Choice cooked razor clam meat, washed and drained. Add cooking wine and mix.
2. Fry the minced garlic with adequate cooking oil over low heat, keep stirring and frying until they turn golden brown color. Put the fried garlic in a small bowl, mix well with salt, oyster sauce and soy sauce, set the garlic sauce aside.
3. Soak the green bean vermicelli into warm water until soften (for around 1 hour), drained and cut into 5 inches portion.
4. Place the vermicelli evenly on a plate, then put the razor clam meat on top of the vermicelli. Lay the garlic sauce evenly on each clam meat, lastly put the chopped chile on top.
5. Steam the clam meat over high heat for 5 minutes.
6. Add the chopped green onion, pour in some hot cooking oil on top to increase the aroma. Server in hot.
